Jules’ Diner – Braised Green Beans

julesdinerMy favorite vegetable is green beans.  I love them fresh or frozen, chilled in a salad or cooked low and slow all day.  I add them to soups and even my Tater Tot Casserole.  This is my favorite way to prepare them.  Great on a cool, Fall day. These have a very savory flavor and will please even the non-veggie fans.

Jules’ Braised Green Beans

1 large bag frozen green beans (fresh are great if you can get them)
4-6 slices of bacon, diced
1 yellow onion, diced
Olive oilGreen Beansjpg
1 tbsp balsamic vinegar (apple cider vinegar will do)
2 tbsp brown sugar
1 dash cayenne pepper (or hot sauce)
32 oz carton chicken stock
House seasoning

In a large stock pot render down the bacon over medium heat.  When bacon is browned, add 1-2 tbsp olive oil and the diced onion.  Saute’ onion till it’s caramelized.  Add vinegar, sugar, cayenne and chicken stock.  Stir till combined.  Fill pot with frozen green beans and toss with liquid.  Turn up heat to medium high and bring just to a boil.  Reduce heat to low simmer and cover.  Toss beans in liquid ever 10 minutes.  Simmer till beans are tender.  This can simmer for up to an hour.

I think I try almost every recipe you put up. And, they are all becoming favorites (in our home, and in our church!!). :) Can’t wait to try this one…
