Jules’ Diner – Sweet Sausage Grinders

julesdinerI’d posted this recipe some time ago, but it disappeared so I thought I’d post it again.  It’s a fall favorite and it gets rave reviews whenever I make it.  It’s also incredibly easy, which doesn’t hurt.

And, like so many of my favorite recipes, it’s even better the next day.  This is great for the big game when you’re inviting a crowd.  These really do melt in your mouth.

Jules’ Sweet Sausage Grinderscitaliansausage

10-12 sweet Italian sausages
4 large red bell peppers
2 large green bell peppers
2 large sweet yellow onions
Olive oil
1 jar spaghetti sauce (I use Ragu Chunky Tomato Garlic & Onion-Use your favorite)
2 pkgs sub sandwich rolls, buttered and toasted

In a large dutch oven brown the sausage in 1-2 tbsp olive oil, 3 minutes per side.  Remove from pan.

Add 2-3 more tbsp olive oil to pan and saute’ the peppers and onions on medium low for at least 15 minutes.  You want the sweet flavoring of the red bell peppers to infuse the sauce, so don’t rush this part.

Add the spaghetti sauce to the pan, stir and lower the heat to simmer.

Carefully cut the sausages lengthwise and add them to the pan.  Cover and simmer for 1 hour.  Serve on buttered and toasted sub sandwich rolls.  Hint: Open-face is best.
