I am a lover of breakfast, especially breakfast out. Having breakfast out with my family just makes the day feel special, so I enjoy that treat whenever we have time for it.
Not long ago my aunt and uncle were visiting from out of town and the whole family went to a favorite Kansas City breakfast spot. The day’s special was pumpkin pancakes. Richie ordered a stack and loved them so I thought I’d try to make them at home. Here’s what I came up with…
Pumpkin Pancakes
2 c flour
4 tbsp brown sugar
2 tbsp baking powder
1 tsp cinnamon or pumpkin pie spice
2 cups milk or buttermilk
1 cup of canned pumpkin (not pumpkin pie filling)
1 large egg
2 tbsp melted shortening
Sift dry ingredients in a bowl. Set aside. Mix wet ingredients till well blended. Add dry ingredients and whisk till just smooth. Let batter rest 15-20 minutes before frying on a just below medium hot, greased griddle. I cook my pancakes 2 minutes per side. Serve with butter and maple syrup.
* You can substitute real maple syrup for the brown sugar and you can reduce the amount for a less sweet pancake.

Pancakes are the one thing I’m ‘not allowed’ to make at our house. I can’t make a good pancake to save my life. Pancake making might be the only thing my family has ever given up on me for. . . .

The girls and I cooked up several sugar pumpkins, so we’ve got pumpkin aplenty. I’m thinking these would make a fun dinner with some apple-smoked bacon…
